Canning

Pressure Canning (pH above 4.6)
Required for: vegetables, meats, soups, stews, and combination recipes.
Pressure canning reaches 240°F, killing botulism spores that survive boiling water. Botulism is fatal. Never water-bath can low-acid foods.
Equipment: Pressure canner (not a pressure cooker), mason jars, lids, bands.
Critical safety rules:
- Follow USDA-tested recipes exactly. Do not alter ingredients, proportions, or processing times.
- Vent steam for 10 minutes before pressurizing.
- Process at 10 PSI (sea level) or 15 PSI (above 1,000 feet).
- Let pressure drop to zero naturally. Never force-cool.
Freezing
Freezing preserves texture and flavor better than canning for most vegetables. It requires freezer space and consistent electricity but minimal equipment.
Blanching Before Freezing
Most vegetables need blanching (brief boiling) to stop enzyme activity that degrades flavor and color during frozen storage.

Blanching process: Boil water. Add vegetables in a wire basket. Time from when water returns to a boil. Immediately transfer to ice water for the same amount of time. Drain thoroughly. Pack in freezer bags, removing as much air as possible.
Dehydrating
Dehydration removes moisture, preventing microbial growth. Dried foods are lightweight, compact, and shelf-stable for years.
Methods:
- Electric dehydrator: $50-200. Most reliable and consistent. Set to 125-135°F for vegetables, 135-145°F for fruits.
- Oven: Set to lowest temperature (usually 170°F) with door propped open. Less efficient but works.
- Solar: Free but weather-dependent and slow. Best for high-sugar fruits.
Best crops for dehydrating: Tomatoes (sun-dried), apples, peppers, herbs, onions, garlic, and berries.
Fermenting
Fermentation uses beneficial bacteria (Lactobacillus) to preserve food while creating probiotics, enzymes, and enhanced nutrition. Sauerkraut, kimchi, and pickles are classic fermented vegetables.
Basic Sauerkraut Recipe
- 5 pounds shredded cabbage
- 3 tablespoons sea salt (do not use iodized salt—it inhibits fermentation)
Process:
- Mix cabbage and salt in a large bowl. Massage and squeeze for 10 minutes until cabbage releases brine.
- Pack tightly into a clean jar, pressing down until brine covers the cabbage by 1 inch.
- Weight the cabbage down with a clean stone, glass weight, or ziplock bag filled with brine.
- Cover with a cloth to keep out dust and insects.
- Ferment at room temperature (65-75°F) for 1-4 weeks. Taste daily after day 7. When sour enough, refrigerate.
Keep vegetables submerged under brine at all times. Mold growing on the surface is normal—skim it off. Pink or black mold is abnormal—discard the batch. If food smells rotten (not sour), discard it.
Root Cellaring
Root vegetables store for months in cool, humid conditions without any processing.
Ideal conditions: 32-40°F with 85-95% humidity.
Methods:
- In-ground storage: Leave carrots, beets, and parsnips in the garden. Cover with 12-18 inches of straw mulch. Harvest through winter as needed.
- Basement storage: Pack root vegetables in damp sand or sawdust in crates. Store in the coolest corner of the basement.
- Clamping: Bury vegetables in a mound of straw and soil outdoors. Dig into the mound as needed.
Storage durations: Carrots (4-6 months), beets (3-5 months), potatoes (4-6 months), onions (3-6 months if cured), garlic (6-12 months if cured), winter squash (3-6 months), apples (3-5 months).
